I never understood the allure of pork chops until I went to Little Owl in NYC. They are known for their meatball sliders but the pork chops is what impressed me, and this coming from their tiny but very efficient kitchen space; I’ve seen kitchenettes bigger.
For those who don’t eat red meat, I can see how a nice hearty french cut style pork chop can substitute for steak. Be me, I love my steak. But seeing how I’m trying to eat less red meat these days, this is the next best thing. I think Little Owl is onto something with their meatball sliders… it’s like a saucy pork burger. Putting on the to-cook list now.
